The big 3 are Champagne (France), Cava (Spain) and Prosecco (Italy). Champagne is always the most expensive, but if you’d like a French bubbly without breaking the bank, look instead for anything called “Crémant” – Crémant de Bourgogne, Crémant de Loire or Crémant de Jura will all stand up well. In the cava department, look for Segura Viudas or Nada.
A classic sparkling wine cocktail is the French 75:
1.5 oz Gin
.75 oz lemon juice
.75 oz Simple syrup (1-1 ratio)
Shake on ice, pour into a collins glass full of crushed ice – this is the right way to do it! — and top with sparkling wine. Garnish with lemon peel and feel refreshed!
