This week, Cocktail Maestro Norm Owen gives us the keys to the castle – or more accurately, all the secret formulae we need to create great cocktails of our own!

Follow these ratios, and you can’t really go wrong:

Sours (the whiskey sour and gimlet are based on this formula)

2 : 1 : 1… 2 parts spirit to 1 part citrus to 1 part sweet

Spirits include rye, bourbon, scotch, tequila, mezcal, gin, vodka, etc.

Citrus could be lemon or lime juice, something in the tart category, a dry liqueur such as Cointreau counts.

Sweet includes simple syrup (sugar & water), honey, agave, marmalade, etc.

These would be cocktails you SHAKE, so put your ingredients of choice in a cocktail tin filled with ice, shake until very cold, and strain into your chosen glass.

Spirit Forward Cocktails (the Manhattan is an example)

1.5 : 0.75 : 0.25… 1.5 parts spirit to .75 parts aperitif to .25 parts adjuncts… oh, and add bitters.

Again, spirits include whisk(e)ys of all sorts (rye, bourbon, scotch), gin, tequila, mezcal, aquavit, etc.

Aperitifs include fortified wines such as vermouth, Cocchi Americano, Punt e mes

Adjuncts refer to sweet liqueurs, such as chartreuse, peach liqueur, Grand Marnier, maraschino liqueur, Cherry Heering, etc.

These would be cocktails you STIR, so put your ingredients of choice into a cocktail glass filled with ice, stir until very cold, and strain into your chose glass.
